Second day of work complete! 6 hours immersed in textbooks and google researching protocols.  I get to start actual lab work tomorrow!!

For dinner tonight, I was originally just going to make eggs in a basket which is basically an egg fried in a hole cut in a piece of toast.  I just ate cereal this morning and didn’t have the healthiest lunch (Lentils, rice, chicken, and dried apricots- not unhealthy but no vegetables). After I started cooking the egg, I realized that what I was making looked a little like Huevos Rancheros and, since I have ripe avocados and a tomato, I chopped those up and put them on top.  The basil garnish actually added a lot to the meal. 

So what I thought was probably going to taste a little odd was actually pretty good.  I added some blueberries on the side and made a meal out of it.

I survived my first day of work! I’m still a little overwhelmed with details about RNA, cDNA, and quantitative PCR but it’s really nice not to have homework to worry about. 

After heating up my apartment yesterday, I just went for a simple sandwich inspired by a recipe I found in Martha Stewart’s Healthy Quick Cook (most of what’s in here is not quick at all, but what do you expect? And hey, I got the book for a quarter at a garage sale so I can’t complain too much)
I stuffed a whole wheat pita with a ripe avocado, tomato, and pea sprouts.  I couldn’t fit the hummus inside so I just put it on top.  The avocado added quite a bit of fat but it’s the good kind. I figured after the small salad that I ate for lunch, it doesn’t really matter.  It’s healthy fat. Anyway, have a good night all! I’m heading to bed early- I have to wake up at 7am tomorrow to get to work on time with my commute through forest park every morning.

Today was my first day cooking for myself in the apartment.  I figured I’d try actually cooking since I start work tomorrow morning.  The menu for today:

1 Valencia Orange

Lentil and Rice Pilaf with Cumin Seeds (From The Joy of Cooking)- I used brown rice to make it a bit healthier.

Things were a little chaotic since I had to scramble a bit to find everything.  I used Kosher salt since I have an adorable jar full of it (I’ll post a picture soon).

I also Roasted three chicken breasts in the oven so I’ll be able to use them in salads throughout the week.  I’ll probably do this about once a week.  Wow does it heat up my apartment though.  I’m currently avoiding the kitchen now because it’s about 90 degrees.

A New Direction

So, since I’ll be living in my own apartment this summer, I think I’m going to change my tumblr from a random collection of pointless reblogs to a cooking blog! I’m going to have to cook for myself for a few months which will be an adventure- I figured I might as well post about it. I’m sure there’ll be successes as well as disasters and maybe some nights where I’m just too lazy to do anything but eat cereal. I guess you’ll just have to wait and see. Maybe with this project I’ll end up with more than 4 followers too (let’s hope at least)
